If you’ve never heard of New Mexican cuisine, it is part of the broader Southwestern cuisine originating in New Mexico with the New Mexico Chile being the defining ingredient of New Mexican food.
The New Mexico official State Question is “Red or green?” This refers to the choice of red or green chile with an entrée. While it’s not really Mexican food, it’s certainly not Tex-Mex. It’s a style of food that is unique and one that’s hard to find anywhere else in the country.
Enter Carlito’s Burritos, the Las Vegas home of southwest-style burritos, for breakfast and beyond. The restaurant originally opened in 2009 but has been at its newest location since 2015. They also won Las Vegas Weekly’s Best Of Award for Best Restaurant Upgrade 2016 when they moved into a roomier space with a patio, expanded the bar and added on Live-Fire-Q, an attached restaurant that serves Santa Maria-style barbecue.
A few celebrites that have dined at Carlito’s include Billy Gibbons of ZZ Top, Robert Knepper (Prison Break, Homeland, Twin Peaks), MTV personality Bill Bellamy and a number of reality television stars.
Not only is Carlito’s Burritos a celebrity friendly dining spot, but they are also film friendly, welcoming cameras and crew. Carlito’s Burritos has an open space floor plan with an open kitchen and high ceilings throughout, making it easy to accommodate large crews and equipment.
